Acorn Squash

  • 1 acorn squash sliced lengthwise into 1/2 inch slices

  • 2 tbs olive oil

  • 1/2 tsp ground cinnamon

  • ¼ teaspoon paprika

  • ¼ teaspoon salt

  • ⅛ teaspoon ground black pepper

  • 1 tablespoon honey 

  • 1 tablespoon butter 

Instructions

  • Preheat oven 450°F

    Cut your acorn squash in half lengthwise and use a spoon to scoop out the seeds. Then, slice the acorn squash into ½-inch thick slices.

  • Place your acorn squash slices into a large bowl and drizzle with the olive oil.

    2 tablespoon olive oil

  • Next, sprinkle in the ground cinnamon, paprika, salt, and pepper, and toss until all of the squash pieces are well coated.

    ½ teaspoon ground cinnamon, ¼ teaspoon paprika, ¼ teaspoon salt, ⅛ teaspoon ground black pepper

  • Use tongs to transfer the slices to baking sheet and cook for 30 minutes. Turn over and bake for 10 minutes.

  • Remove from the oven and enjoy immediately. If desired, mix together the honey and butter and brush it onto the acorn squash right before serving.
