
1 1/2 c peanuts salted
1/2 c cashews
1/2 c pecans
2 tbs pumpkin seeds
1 tb sesame seeds
1 tbs poppy seeds
1 tbs flax seeds
1/3 c rolled oats
1/3 c dried cranberries
1/3 c raisins
3 tbs coconut oil
1/3 c maple syrup
3 tbs water
Coarsely chop the nuts and add to a large bowl with seeds and rolled oats.
In a small sauce pan combine coconut oil, maple syrup and water and bring to a slight boil.
Pour warm liquid mixture over dry ingredients and add dried fruit.
Mix thoroughly and with wet hands form 12 cookies balls and place on a lined parchment paper. Cover with parchment paper and press the balls into a 2" diameter cookie.
Refrigerate for 2 hours. Store in a cool place. Can be frozen for longer storage.
